June 24th is the Day of St. John the Baptist, the patron saint of Puerto Rico. Puerto Ricans celebrate big on this day, with processions, parades, and parties...and here in Santa Cruz, Pop Ups!
I can think of no better way to celebrate than to bring you, at long last...PASTELES!!! Pasteles are one of the most significant and signature dishes in all of Puerto Rican cooking. They are similar to tamales, but made with a masa of green bananas, plantains, and tropical root vegetables, and are traditionally filled with sofrito-stewed pork. They are then wrapped up in banana leaves, tied up with string like a perfect little present, and steamed or boiled. (I am eating one for lunch as I write this, and am getting SO excited about sharing them with you!!)
And what is a Puerto Rican celebration without pernil? We will have it as well!!! Another quintessential Puerto Rican dish, pernil is garlic-marinated pork shoulder, roasted until its fatty top turns into succulent and cripsy chicharron.
We'll have sides of achiote rice, avocado-tomato-cucumber-salad, and tostones (twice-fried green plantains)!
